OUR PROJECT IS DEDICATED TO THE TRADITION OF LANDRACE AGRICULTURE. A LANDRACE IS A LOCALLY ADAPTED SPECIES THAT IS STILL SEMI-WILD AND GENETICALLY VARIABLE. LANDRACE SPECIES ARE NOT A STABLE VARIETY BUT INSTEAD CAN BE THOUGHT OF AS A GENETICALLY DIVERSE COLLECTION WITHIN A SPECIES WITH COMMON TRAITS. BECAUSE THEY ARE NOT FULLY DOMESTICATED, THEY CONTINUE TO EVOLVE AND ADAPT TO THEIR PARTICULAR MICROCLIMATES AND AGRICULTURAL CONDITIONS. LANDRACE PLANTS AND ANIMALS FORM THE FOUNDATION OF OUR COLLECTIVE AGRICULTURAL AND CULINARY HERITAGE.
THE ORGANIC CULTIVATION OF LANDRACE GRAINS MAKES IT POSSIBLE TO EXPRESS THE TERROIR OF A CROP. OUR HISTORICAL GRAINS ARE GROWN IN DIVERSE LOCATIONS FROM THE MOUNTAINS TO THE SEA. WE ALSO PLANT FIELD BLENDS OF UP TO 10 VARIETIES IN ONE FIELD, ALLOWING NATURE TO TAKE ITS COURSE AND FOR A NEW LANDRACE VARIETALS TO BE CREATED
